A short and a long recipe, whatever amount of time you have available. The result, in both cases, will be delicious.
Let’s start with a chocolate and vanilla cream
Ingredients for 8 people
300gr dark chocolate, coarsely chopped
2 egg yolks
1 tbsp vanilla extract
300ml double cream
whipped cream for garnishing
Slowly melt the chocolate on a very low heat, then set aside to cool.
In a separate bowl, whip the cream with the vanilla extract. Add the yolks and chocolate and mix well until you get a smooth cream. Leave in the fridge for two hours before serving.
And the second one is short-crust pastry with cream and strawberries. If you have even more time, you can make the pastry from scratch.
Ingredients for 6 people
500gr ready made short-crust pastry
500ml milk
1 stick of cinnamon
4 yolks
100gr sugar
50gr flour, sifted
150gr small strawberries to decorate
Score the vanilla stick and remove as many seeds as you can, add them to a pan with the whole stick and the milk, then bring to boil and set aside to cool.
whip the yolks with the sugar until pale and fluffy, then add the flour and mix until you get a smooth cream.
Sieve the milk into the bowl, give a stir and put back in the pan. Cook on a medium heat for until the cream has thickened (but don’t bring to boil again).
Pour the cream in a bowl and let it cool covered with cling-film.
Stretch the pastry until very thin then transfer it to a shallow tin (like those to cook pizza for example). Make it adhere to the edges, and get rid of the pastry in excess.
Cover the base with tinfoil, and weigh it down with raw beans, and bake it for 20 minutes at 180C°.
Once it’s baked, pour the cream inside, decorate with the strawberries, and dust with icing sugar. Keep in the fridge until it has to be served.
